About
Our grass-fed organic sirloin steak is a prime cut, with just the right amount of fat and marbling for melt-in-the-mouth succulence. This extra thick cut is perfect for sharing – just cook it up and slice into generous strips, to feed 2-3.
Cooking a bigger piece of steak makes it easy to get a great deep colour on all sides, especially the fat, without over-cooking the middle. The more colour on the surface, the better the flavour – and this way, you can still enjoy a tender, pink centre. This is particularly useful if you’ll be cooking your steak on a BBQ.
How to prepare
Remove the steak from the fridge 20 minutes before cooking. Season generously. Starting with the fatty edge, fry/griddle over a high heat until deeply coloured on all sides; this should take about 8-10 minutes. Next, slide into a preheated oven at 180°C/Gas 4 for about 8 minutes for a medium finish (if cooking on a BBQ, move it to a cooler part of the griddle and cook for a further 10-12 minutes instead). Leave to rest somewhere warm for at least 10 minutes before serving.
Storage
Keep refrigerated below 5°C. Once opened, use immediately for best quality. If not required immediately freeze as soon as possible and always within the use by date. Once frozen use within 1 month. Defrost in a fridge and use same day. Do not refreeze.
