Chicken, pork, lemon and herb pie
More of a cold lunch pie, so you'll need both top and bottom crust.
Ingredients
- 300g diced chicken
- 250g pork sausage meat
- 3 spring onions, finely chopped
- ½ tsp fresh thyme, finely chopped
- ½ tsp fresh sage, finely chopped
- 1 tbsp fresh parsley, finely chopped
- 1 tsp lemon juice
- ½ tsp grated lemon zest
- 1 tbsp double cream
- pinch mace

Step 1
Preheat oven to 180°C/Gas Mark 4. Line an oven dish with a layer of your pastry. Combine all the ingredients in a bowl, and pour the mixture into the base. Cover with the pastry top and pinch together with the base at the edges. Bake for 50 minutes minimum to ensure the meat cooks thoroughly.
