Chicken thighs and drumsticks with lemon and tarragon
The lemon and tarragon in this recipe bring a distinctive freshness to the roasted chicken. Try it with plain boiled rice or new potatoes and a fresh green salad.
Ingredients
- 50g butter
- 1 tbsp sunflower oil
- 2 chicken thighs
- 2 chicken drumsticks
- ½ lemon
- 1 heaped tsp tarragon, chopped
- salt and pepper

Step 1
Preheat oven to 180°C/Gas 4. Melt ¾ of the butter with the oil in a frying pan until it begins to foam then add the chicken pieces and fry until golden brown all over.

Transfer the chicken and remaining butter to a small casserole dish. Slice the lemon, cut the slices in half and add to the chicken. Season and bake in the oven with the lid on for 20 minutes.

Remove the lid, stir in the tarragon and the rest of the butter and cook for a further 10 minutes before serving.
