Chunky avocado and tomato salad with coriander and sweet chilli dressing
The key to this lovely summer salad is ripe tomatoes and avocados – don't try and make it without. Serve this as an accompaniment to chilli con carne or marinated fish, or just on its own for a light vegetarian lunch.
Ingredients
- 2-3 ripe avocados
- 500g tomatoes
- ¼ cucumber
- ½ red onion or 1 bunch of spring onions, chopped
- 1 garlic clove, crushed
- 1 tbsp sweet chilli sauce
- 1 tbsp balsamic vinegar
- 2 tbsp sunflower oil
- 2 tbsp coriander, chopped
- juice of ½ lemon or lime
- salt and pepper

Step 1
Cut the avocados, tomatoes and cucumber into chunky 2cm dice. Mix together in a bowl with the onion and season well.

Mix all the remaining ingredients together and season well. Toss with the vegetables and serve.
