Courgette salad with lemon and herbs
Thrown together in five minutes, this healthy, vegetarian side is one for the late summer when courgettes are on overload. Add in a handful of toasted almonds or pine nuts for a bit of crunch. Try this alongside creamy pasta or risotto; in a big bowl at a BBQ; or as a side to grilled fish.
Ingredients
- zest and juice of ½ lemon
- 2 tbsp olive oil
- ½ tbsp mint, chopped
- ½ tbsp parsley, chopped
- 4 courgettes, grated
- 1 tsp poppy seeds
- salt and pepper

Step 1
In a bowl combine the lemon juice and zest, olive oil and herbs.

Add the grated courgettes and poppy seeds and toss together to coat the courgettes.
