Salad dressings & dips
Garlic dip
Serve this easy and delectable dip with mixed vegetable crudités – raw bunched carrots and celery, or cooked bunched beetroot. Or try it with beetroot or celeriac crisps. A lovely canapé for summer or winter.
Ingredients
- 2 whole heads dried garlic
- 1 tbsp olive oil
- 4 tbsp mayonnaise
- 4 tbsp whole yoghurt
- 1 tsp wholegrain mustard
- salt and pepper

Step 1
Preheat oven to 180°C/Gas 4.

Step 2
Brush the garlic heads with the olive oil. Wrap in foil and place in a baking dish in the oven for 25-30 minutes.

Remove from the oven and leave to cool slightly. Separate the cloves and peel. Place in a bowl and mash together with a fork.

Season with salt to taste. Add the mayonnaise, yoghurt and mustard and mix together. Season with pepper. Chill until required.
