Japanese carrot salad
This quick vegetarian recipe is one to have up your sleeve to serve with any Asian-style meal. It's also good with the addition of grated radishes (or Asian daikon radishes), and some toasted sesame seeds sprinkled on top.
Ingredients
- 3 tbsp rice vinegar
- 1 tbsp caster sugar
- a thumb of fresh ginger, peeled and finely grated
- 500g carrots, coarsely grated
- salt to taste

Combine rice vinegar, sugar and ginger. Pour over carrot and add salt to taste.
