Leek and mascarpone garlic bread
This combination of pungent garlic bread and sweet, creamy leeks is an ace dinner or light lunch when you don't want to faff. Serve on its own or with salad.
Ingredients
- 25g butter
- 2 leeks, washed and sliced
- 100ml crème fraîche
- 1 tsp coarse grain or Dijon mustard
- 150g mascarpone
- handful fresh parsley, chopped
- 2 garlic cloves, crushed
- 4 slices sourdough or other good bread
- olive oil
- salt and black pepper

Step 1
Preheat oven to 200°C/Gas 6.

Step 2
Melt the butter in a large pan, add the leeks and cook gently for 8-10 minutes until tender. Turn down the heat, add the crème fraîche, mustard, mascarpone. Season and stir well to mix all the ingredients together.

Add the parsley. Spread the crushed garlic over the bread and drizzle with a little olive oil. Bake in the oven for 5-10 minutes, until crisp.

Spread the garlic bread with the leek mixture and warm under the grill.
