Lemon onion sauce
This easy, zesty sauce goes very well with meaty grilled fish or chicken, and can also be used to dress a plate of veg.
Ingredients
- 450g onions, chopped
- 25g butter
- olive oil
- pared zest and juice of 1 lemon
- salt and pepper

Step 1
In a tightly covered pan, cook the onions in butter and a dash of olive oil with the pared zest for 30 minutes. Purée with the juice of the lemon and season.
