Minced beef and macaroni in tomato sauce
This is delicious as a meal in itself, or serve with garlic bread and a mixed salad.
Ingredients
- 1 onion, finely chopped
- 4 garlic cloves, crushed
- olive oil
- 500g minced beef
- 1 tsp baharat spice mix
- 400g tin chopped tomatoes
- 2 tbsp tomato purée
- 2 tbsp mushroom ketchup
- 500g macaroni, cooked until tender, with a dash olive oil
- 2 eggs, beaten
- 2 good handfuls strong cheddar, grated

Step 1
Sauté the onion and garlic in olive oil until soft but not coloured, add the mince and baharat spice, and fry until well browned.

Reduce the heat, stir in the tomatoes, tomato purée and mushroom ketchup plus 250ml water.

Cover and cook gently for 15 minutes. Taste and adjust the seasoning if necessary.

Place half the cooked macaroni in a greased dish, add the meat and cover with the rest of the pasta.

Pour over the beaten egg, sprinkle with the cheese and bake in a medium oven for 35 minutes until golden.
