Pak choi and sprouting beans
This healthy vegetarian stir-fry makes a great quick dinner with a bowl of fluffy jasmine rice. Pak choi (or bok choi) can be boiled, steamed, sautéed or added to stir-fries, soups or salads.
Ingredients
- 1 tbsp sesame oil
- 3 spring onions, sliced
- 2 garlic cloves, cut in slivers
- 2cm piece fresh ginger
- 1 carrot, cut into matchsticks
- 125g sprouting beans
- 1 pak choi, shredded
- 50g unsalted cashew nuts
- 2 tbsp dry sherry
- 3 tbsp light soy sauce
- 1 tsp cornflour
- 1 tsp honey
- 35ml cold water
- salt and pepper

Step 1
Heat the oil in a large wok and fry the onions, garlic, ginger and carrot for 2 minutes. Add the sprouting beans and fry for another 2 minutes. Add the pak choi and nuts and stir fry until the leaves are just wilting.

Quickly mix all the remaining ingredients in a jug and pour into the wok. Stir to coat the vegetables in the sauce, season and serve immediately.
