Pork & gammon
Pork with white beans, buttered braised cabbage and caraway seeds
Pork and cabbage are a classic combination in cooking the world over – add a tin of beans and you have a complete and delicious 20 minute meal.
Ingredients
- small knob butter
- 1 tsp caraway seeds
- ½ large January King cabbage, shredded
- oil for frying, e.g. vegetable
- 500g pork steaks
- 250ml hot chicken or veg stock
- 1 tin cannellini beans, drained and rinsed
- a few fresh thyme leaves, or ½ tsp dried
- salt and pepper
Method

Step 1
Melt a little butter in a pan. Add the caraway seeds and fry for a minute or two.

Add the cabbage, cover and cook for about 10 minutes, until the cabbage is soft. Season with salt and pepper.

Meanwhile add a little oil or half butter and half oil to a large frying pan and cook the pork until almost cooked through.

Step 4
Add the stock, cannellini beans and thyme. Season with salt and pepper.

Step 5
Continue to simmer for another 5 minutes or until the pork is cooked through. Serve on top of the cabbage.
