Pangrattato (garlic crumbs)
Pangrattato (literally 'grated bread') is called 'poor man's Parmesan', but it doesn't taste like second best. Toasted in garlic and oil, crispy breadcrumbs add a remarkable taste and texture to dishes.
Ingredients
- 3-4 fat slices stale bread, crusts removed
- olive oil
- 2-3 garlic cloves, peeled and finely chopped
- Pinch of dried chilli flakes
- 1 lemon, zested
- Salt and pepper

Step 1
Blitz the bread in a food processor to coarse crumbs.

Warm 2 tablespoons of oil in a frying pan, add the garlic and stir for a few seconds, then add the breadcrumbs.

Fry over a medium heat for 4-5 minutes, until golden and crisp.

Remove from the heat. Stir in chilli flakes, lemon zest and salt and pepper, all to taste.
