Roasted Jerusalem artichokes
Jerusalem artichokes (or earthapples) are pleasingly easily grown. They taste like a sweeter, more subtle version of the potato and can be treated in more of less the same way in the kitchen. These artichokes make a lovely roast dinner side dish.
Ingredients
- 300g Jerusalem artichokes
- 3 tbsp olive oil
- few sprigs thyme
- 2 garlic cloves
- salt and pepper

Step 1
Preheat oven to 200°C/Gas 6.

Step 2
Toss Jerusalem artichokes with a the olive oil, spread them out on a baking tray with the thyme, garlic cloves, and some salt and pepper and roast for 30 minutes, until tender.
