Rocket with prosciutto and Parmesan
This is a classic salad combination. You could add in ripe figs or slices of peeled pear for a bit of sweetness that does well with the saltiness of Parmesan and prosciutto.
Ingredients
- 2 tbsp olive oil
- juice of ½ lemon
- 300g rocket
- 30g Parmesan cheese, cut into slivers
- 8 thin slices of prosciutto (or serrano ham)
- salt and pepper

Step 1
Whisk the olive oil and lemon juice together with some salt and pepper to make a dressing.

Step 2
Pour over the rocket leaves and toss. Divide between four plates, sprinkle with the Parmesan slivers and drape each serving with two slices of prosciutto.
