Simply cooked purple sprouting broccoli, with lemon and butter
A simple and luxuriant recipe for purple sprouting broccoli: a good way to enjoy the first crop of the season. This works as a vegetarian side with pretty much anything, or could be eaten as a starter on its own.
Ingredients
- 500g purple sprouting broccoli, trimmed
- 50g butter, melted
- juice and zest of ½ lemon, more to taste
- 75g hazelnuts or almonds, toasted and chopped
- salt and pepper

Step 1
Steam or boil broccoli for about 3 minutes, until just tender.

Drain, place on a serving platter. Drizzle with the melted butter and lemon juice and zest.

Season with salt and pepper and sprinkle over the chopped nuts.
