Slow cooked sausage meat sauce
A classic, easy supper, if you do it in advance, or good enough for a dinner party. Serve with pasta or rice.
Ingredients
- 500g minced pork
- 1 tsp ground fennel seeds
- 2 tbsp olive oil
- 2 red onions, chopped
- 2 garlic cloves, finely chopped
- good pinch dried chillies (to taste)
- 2 bay leaves
- 250ml red wine
- 2 tins chopped tomatoes, liquid drained away
- 150ml crème fraîche
- 120g Parmesan, grated
- salt and pepper
Method

Step 1
Season the pork with the teaspoon of ground fennel and a generous sprinkle of salt and pepepr.

Heat the olive oil in a pan and add the seasoned pork. Fry and stir for a few minutes until evenly browned.

Add the onion, garlic, dried chillies and bay leaves. Cook for about half an hour until the onions begin to brown and the mixture is fairly dry.

Step 4
Add the wine, turn up the heat and cook until most of the wine has evaporated. Add the drained chopped tomatoes and cook at a bare simmer until you have a nice thick sauce (it will take an hour or more).

Add the crème fraiche and Parmesan and leave for 5 minutes to get acquainted.
