Spinach with yoghurt
Nutritious, simple and quick to cook. The combination of earthy spinach and cooling yoghurt is lovely with curry and dal, or as part of a mezze spread.
Ingredients
- 1 onion, chopped
- 2 tbsp sunflower oil
- 225g cooked spinach, roughly chopped
- 600ml Greek-style yoghurt
- 1 garlic clove, crushed
- powdered sumac or sweet paprika
- dried mint, to garnish
- salt and pepper

Step 1
Sauté the onion in the oil until browned. Cool slightly.

Step 2
Mix with the spinach, yoghurt, garlic and seasoning. Spoon into a serving bowl and chill until nearly ready to serve.

Decorate the surface with a scattering of sumac or sweet paprika, and dried mint.
