Stir-fried asparagus
This quick stir-fry recipe goes well with rice, grilled fish or chicken. If you like things spicy add a generous pinch of chilli flakes. Throw in other seasonal vegetables to bulk it out – try sugar snap peas, broccoli or spinach. Ingredients
- 1 bunch asparagus
- 1 tbsp sunflower oil
- 1 tsp brown sugar
- pinch dried chilli flakes (optional)
- 1 small can water chestnuts, drained and thinly sliced
- 1 garlic clove, crushed
- bunch chives, cut into 2cm lengths, or some chopped wild garlic leaves
- 2 tbsp soy sauce

Step 1
Prepare the asparagus by breaking off the end of each woody stalk and then cutting the spears in half.

Heat the oil in a wok, add the asparagus, sugar and some salt and stir-fry over a moderately high heat for about 3 minutes.

Add the dried chilli, if using, followed by the water chestnuts, garlic, chives, plus 3 tablespoons of water and cook for 2 more minutes, stirring constantly.

Stir in the soy sauce and serve immediately.
