Stir-fried pak choi
Everything needs to happen fast in this quick, healthy vegetarian recipe – so make sure you have the ingredients prepared in advance. If the ginger, garlic or chilli show signs of burning, remove pan from heat and add the pak choi straight away.
Ingredients
- 2 tbsp sunflower oil
- 3cm fresh ginger, peeled and finely chopped
- 1-2 red chillies, finely sliced
- 2-3 garlic cloves, finely chopped
- 2 pak choi, stalks finely sliced, leaves roughly sliced
- soy sauce
- salt
- sesame oil
Method

Step 1
Heat the sunflower oil in a large frying pan or wok until very hot.

Quickly add the ginger, followed by the chilli and garlic.

Then immediately add the pak choi stalks and quickly stir.

Cook for 1 minute then add the leaves and stir until just wilting.

Remove from heat. Add a pinch of salt, then a shake of soy sauce and a few drops of sesame oil and serve.
