Vinaigrette for salad leaves
Knowledge of how to make a basic vinaigrette is a must in any vaguely foodie household. There are countless variations - the addition of garlic, lemon juice, herbs, flavoured oils and vinegars etc. - but this is a great springboard recipe for further experimentation.
Ingredients
- 225ml olive oil
- 75ml vinegar (red, white, balsamic or cider)
- 1 tbsp Dijon mustard
- salt and pepper

Step 1
Whisk together all the ingredients, or shake in a jam jar. Keep in the fridge, for up to a week or two.
