Walnut and shallot vinaigrette
This vinairette would go well with a classic rocket, pear, blue cheese and walnut combination. It would also be lovely tossed with briefly blanched green beans, or orange, watercress, feta and beetroot salad.
Ingredients
- 1 tbsp sherry or red wine vinegar
- ¼ tsp salt
- 1 shallot, finely diced
- 4 tbsp olive oil
- 1 tsp walnut oil

Step 1
Whisk all the ingredients together. This dressing could be used with winter leaves such as claytonia, watercress or endive.

Serve with toasted walnuts, orange segments or pear and chopped blue cheese.
