Warm leek vinaigrette for fish
This easy way with leeks makes a good topping for grilled white fish or poached chicken. Eat with a bit of fragrant white rice for a clean and healthy lunch or dinner.
Ingredients
- 2 tbsp olive oil
- 1 large garlic clove, finely sliced
- 1 leek, cleaned and cut into very fine strips
- zest and juice of ½ lemon
- salt and pepper

Step 1
Heat the oil in a frying pan and add the garlic and leek. Fry until both are turning golden.

Remove from the heat and add the lemon juice and zest. Season, taste and add a little more lemon juice if you like.
