Curried cabbage and apple coleslaw
Very easy to make, this is a good recipe for a barbecue, picnic or light lunch. It has a nice kick from the curry powder, layered with sweetness of the raisins and apples and crunch from the cabbage and cashews.
Ingredients
- ½ medium pointed cabbage, or spring or summer greens, finely shredded
- 2 apples, cored and thinly sliced
- 2 spring or 1 bunched onion, finely sliced (use white and green parts)
- 2 tbsp crème fraîche or mayonnaise
- 2 tbsp plain yoghurt
- 1 tsp medium curry powder
- 2 tbsp raisins
- 50g cashew nuts, toasted in a dry frying pan for a couple of mins until golden, roughly chopped
- salt and pepper
