Roasted garlic dressing
It couldn't be easier to make this mellow, caramelised garlic dressing. It's useful for anything from bringing life to a simple green salad to drizzling over steamed purple sprouting broccoli or stirring into pasta for a quick dinner. Or don't even turn the roasted garlic into dressing – it's delicious spread straight on toast.
Ingredients
- 1 whole garlic bulb
- olive oil
- lemon juice
- salt and pepper

Step 1
Preheat oven to 200°C/Gas 6.

Step 2
Rub off the excess papery skin from the garlic, without separating the cloves. Slice off the tips, exposing the ends of the cloves. lace the garlic on a piece of foil, drizzle with 1 tablespoon of olive oil and fold the foil round to seal it. Bake until very soft, about 40 minutes.

Step 3
Remove from the oven. Leave to cool slightly, then squeeze out the soft pulp from the cloves into a bowl. Use a fork to whisk the garlic with 4 tablespoons of olive oil, a squeeze of lemon juice, and seasoning of salt and pepper.
